Ingredients

  • 250 g AP flour
  • 20 g butter
  • 10 g oil
  • 150 g boiling water
  • ½ tsp salt
  • 1 tsp baking powder

Method

  1. Pour boiling water into the flour, salt, and baking powder mixture and mix with a utensil until mostly incorporated.
  2. Once cooled enough to handle, knead the dough just enough to get everything well incorporated.
  3. Place the dough in a bowl, cover with plastic wrap, and let it rest for 30 minutes.
  4. Separate the dough into eight equal portions, about 52 grams each, and keep them covered to prevent drying.
  5. Roll out each tortilla about halfway, coat in flour, and stack them. Once all are partially rolled, flip the stack and finish rolling each one out.
  6. Preheat a comal to slightly less than medium heat.
  7. Cook on the first side for about 10 seconds, flip and cook until brown spots appear on the bottom, then flip one more time to finish cooking.
  8. Transfer cooked tortillas to a clean kitchen towel to keep them warm and soft.

Notes

If you want your tortillas to be fluffier, use 1 full teaspoon of baking powder.
